Striking Jumbo Crispies!!! MMMMMM!!!

Another Friday has come and gone.  And I was soooooo bad.  I slept until after 1:30 in the afternoon.  Hubby came home early to get started on the yard and I guess that subconsciously I felt that if he was home doing stuff I could just stay blissfully comatose in bed.  It was wonderful, I was in that deep deep sleep where your whole body feels all warm and fuzzy and I just sank into the bed.

Shamefully, what actually got me out of bed was waking up to the thought that I had volunteered to make rice crispy treats for my daughter’s fun meet and I had to shower, go to the store to get stuff, make the stuff, wrap the stuff and get it there by 4:30.  So…..I got up and got going.

And I have to say – my crispy treats were the BOMB!!!  I made super jumbo ones with M&M’s on top.  By the 3rd batch I had a pretty good system and my technique was fully honed…..I was in the zone.  Anyhoo – when I showed up with my treats one of the moms said to me “I know which treats are going to go first….”  My treats dwarfed the competition (not really a competition but, you know…) so yes, they went quickly and I’m sorry – if you’re doing a fundraiser and want to make kids happy – you need M&M’s or sprinkles.  Add both and piggy banks will be broken!

JUMBO CRISPY TREATS (4 Jumbo treats)

  •  6 cups crispy rice cereal
  • 40 Marshmallows
  • 3 tbsp butter
  • 1 c. plain M&M’s

Microwave marshmallows and butter in large bowl for 2 minutes.  Stir.  Microwave 1 more minute.  Stir in crispy rice cereal and mix well.  Pour into 9X9 baking dish.  Be sure to spray the pan with PAM cooking spray and after pouring the batch into the pan, top with lotsa M&M’s, spray a sheet of wax paper with PAM and use that to flatten the treats and set the M&M’s.  Remove the wax paper and refrigerate for 15 mintues.  Don’t cool them completely because they become hard to cut.  Each 9X9 pan makes 4 jumbo treats.
